Big Mac Sauce - The Experiment

I recently took a range of Big Mac Sauce recipes from across the internet and made them all to compare. I found a definite winner.....



I took a range of recipes which had the most differing ingredients. Some had sugar v’s sweetener, some had minced onion, mustards varied, then you have fresh pickles v’s pickle relish, much variation. Much mess.



In the end I tried 5 different recipes. There are no methods listed as the method for each is just bung in a bowl and mix. They all need some time in the fridge before you eat to let the flavours develop.

 

Recipe One


  • 1/2 tsp of garlic salt

  • 1/2 tsp of onion salt

  • 2 tbsp of pickle relish - this one uses French's Relish

  • 3 tbsp of mayo

  • 1/2 tsp paprika

  • 1/2 tsp of white wine vinegar

  • 1 tsp of American mustard

Verdict: This one was very good and definitely tasted like the original. A but too much garlic though.

 

Recipe Two


  • 50 g mayonnaise

  • 30 g shallots, finely diced

  • 30 g dill pickles, finely diced

  • 40 g tomato ketchup

  • 15 g French mustard

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2 tsp sweet paprika

  • 1 tsp white wine vinegar


Verdict: This one was the worst by far. It tasted like seafood sauce which I think it because it's the only one that uses ketchup. I’m glad as this was the most fiddly to make what with dicing onions and gherkins.

 

Recipe Three


  • 3/4 cup mayonnaise

  • 1 tablespoon yellow mustard

  • 2 tablespoons sweet pickle relish

  • 2 teaspoons granulated sugar

  • 1/2 teaspoon white wine vinegar

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder


Verdict: This one was really nice but not as similar to Big Mac Sauce. Was sweet which I liked. Would make again but it's not the winner.

 

Recipes Four and Five



This one just stated sweet pickle relish so I tried two of the Baxter's range.


Recipe 4 used Mustard & Gherkin relish

Recipe 5 used Cucumber & Dill relish.


  • 1 cup Mayo

  • ¼ cup Sweet Pickle Relish

  • 1 ½ tablespoons Prepared Yellow Mustard

  • 1 teaspoon White Wine Vinegar

  • ½ teaspoon Paprika

  • ¼ teaspoon Garlic Powder

  • ¼ teaspoon Onion Powder


Verdict: These were both good but recipe 5 didn't taste as much like Big Mac sauce. I think the cucumber taste was too strong. Recipe 4 was excellent.

 

And the winner is.......


Recipe 4! It was a close call between 4 and 1 but the latter had a bit too much garlic which masked the other ingredients more. Basically I think the trick is 1/4 spoon of garlic salt not 1/2!


Overall I'd say both 1 and 4 are worthy replicas so maybe it depends which relish you can get hold of.


I used French's American Mustard in all recipes except for recipe 2 which called for French mustard so I used dijon.

The eating!


Between this and the McMuffins I’m ready to open my own McTaylors .
