Bourbon Mushroom Sauce

I do love a steak sauce.



Ingredients


  • 2 tbsp butter

  • 1 large shallot minced

  • 1 clove garlic minced

  • Salt and pepper to season

  • 1 1/2 cups sliced mushrooms

  • 57ml Bourbon

  • 1/2 cup beef stock

  • Pinch nutmeg

  • 1/4 cup double cream

  • 1/4 tsp thyme

  • 1 tbsp additional butter cold

Instructions


  1. Sauté the mushrooms in the butter over medium heat until they shrink and just begin to turn a little brown at the edges.

  2. Season with salt and pepper.

  3. Add the shallots and garlic and sauté for another minute or so until they soften.

  4. Add the bourbon and let that cook off for a minute.

  5. Add the beef stock and nutmeg and allow the sauce to reduce by almost half for the next few minutes.

  6. Add the double cream and thyme and cook for until the sauce is the right consistency.

  7. Just before serving, remove the sauce from the heat and stir in the additional butter for shine and body.
