More soup endeavors. This one is ridiculously easy. Again add crispy chilli for heat but also to cut through the cheese.
Ingredients
3 tbsp garlic infused olive oil (or add 1 minced garlic clove to the onions)
6 spring onions (finely chopped)
2 tsp dried thyme
1kg frozen broccoli
1250ml hot vegetable stock
150g crumbled stilton cheese
Black pepper
Method
Heat the garlic oil in a large pan over a medium heat.
Add the chopped spring onions and cook for a couple of minutes.
Add the thyme and the broccoli and stir in the heat for a minute or so.
Add the hot vegetable stock and Stilton and bring to a boil, then place the lid on and cook for 5 minutes.
Liquidise in a blender in batches.
Add pepper to taste.
