Broccoli & Stilton Soup

More soup endeavors. This one is ridiculously easy. Again add crispy chilli for heat but also to cut through the cheese.



Ingredients


  • 3 tbsp garlic infused olive oil (or add 1 minced garlic clove to the onions)

  • 6 spring onions (finely chopped)

  • 2 tsp dried thyme

  • 1kg frozen broccoli

  • 1250ml hot vegetable stock

  • 150g crumbled stilton cheese

  • Black pepper


Method


  1. Heat the garlic oil in a large pan over a medium heat.

  2. Add the chopped spring onions and cook for a couple of minutes.

  3. Add the thyme and the broccoli and stir in the heat for a minute or so.

  4. Add the hot vegetable stock and Stilton and bring to a boil, then place the lid on and cook for 5 minutes.

  5. Liquidise in a blender in batches.

  6. Add pepper to taste.
