Browned Butter Fettuccine Alfredo

Not for dieters. I absolutely love creamy pasta and this is so easy. The peas add the freshness pop you need with all that cream and butter. Serve with salad for health.



Ingredients

  • 500g long pasta

  • 8 tbsp unsalted butter

  • 2 cloves garlic, minced

  • 1 cup double cream

  • 1 cup grated parmesan

  • 1 cup peas

  • Salt and pepper


Method

  1. Boil the pasta until al dente, drain and set aside.

  2. Slowly melt and simmer butter.

  3. Once you smell a toasty aroma, add the garlic and cook for a couple of mins.

  4. Add cream to the browned butter and simmer until reduced by about a third.

  5. Stir in the Parmesan until evenly melted together, creating a smooth sauce.

  6. Toss cooked pasta into the sauce until evenly coated.

  7. Stir in the peas.
