Carbonara

My absolute favourite food! I have tried many, many recipes and this is my favourite way to make it.



Quantities are approximate - it's a bit of a throw whatever in thing, I suspect I always use more cheese.


Ingredients


  • 100g pancetta

  • 150g parmesan

  • 2 garlic cloves, minced

  • 50g butter

  • Dash of cream (I know that's not traditional but I like it)

  • 3 egg yolks

  • 1 tbsp white wine (optional)

  • Pasta

Method


  1. Boil pasta, reserve 1 cup of water once it gets starchy

  2. Fry off pancetta and garlic in butter

  3. Add wine (if using) to deglaze pan and fry off for a few minutes

  4. Add parmesan and pasta water and stir until melted

  5. Add cream to reduce thickness (not too runny)

  6. Stir in pasta

  7. Take off heat (important!) and mix in egg yolks


The absolute key thing here is to take off the heat before adding the eggs or they will scramble.


Serve with green salad and a cold, crisp glass of white wine.
