Celeriac Remoulade

Had this coleslaw alternative from Waitrose and really liked it. Turns out you can only buy it there and I am a 'special occasion' Waitroser. So I spent a good 20 minutes grating a celariac, even with my drunk tik tok super grater buy. Not sure it was entirely worth it although It's a good lunch side that doesn't result in onion aftertaste.



Ingredients

 

  • 1 celeriac, peeled and sliced into thin matchsticks

  • 1 lemon, juice only

 

For the dressing

  • 6 tbsp mayo

  • 1 tbsp dijon mustard

  • ½ lemon, juice only

  • Pinch of sugar

  • Salt

  • Black pepper

 

Method

 

  1. Grate the celeriac into a bowl and cover with cold water and lemon juice to prevent it going brown.

  2. Mix all the dressing ingredients together and season with salt and pepper.

  3. Drain the celeriac, toss in the dressing and leave to soften for 30 mins before serving.


Due to the water soaking it will puddle a bit when it's left to stand (see picture). This is normal, just give it a mixy mix.
