Yum and thrice yum. How can cheese and chicken not be? There is excessive cheese - I recommend a balsamicy salad with it to cut through the richness.
Ingredients
Sauce
3 tbsp butter
2 tsp minced garlic
3 tbsp flour
2 ½ cups whole milk or single cream
Salt to taste
¼ cup grated parmesan
115g cream cheese, softened
Lasagna
¾ cup ricotta cheese
1 egg
Lasagna sheets
2 cups cooked chicken, cut into bite size pieces
2 cups grated mozzarella
¼ cup grated parmesan
4 cups baby spinach leaves
Method
Preheat oven to 200C.
Oil an 8x8 baking dish.
Add butter to a saucepan over medium heat and when it’s melted and no longer foaming, stir in the garlic and flour and cook for 30 secs.
Gradually whisk the milk/cream into the pan.
Bring to a simmer and cook until thickened.
Remove from the heat and add the parmesan, cream cheese and spinach.
Stir until the spinach is wilted.
Whisk the egg and ricotta in a small bowl until blended.
Assemble: - 1/4 cup sauce - Lasagna sheets - 1/3 of the ricotta - 1/3 of the chicken - 1/3 of the mozzarella - 1 tbsp parmesan - 1/3 of the remaining sauce
Repeat 2 more layers and sprinkle the top with mozzarella and parmesan.
10. Bake uncovered 20-25 minutes, until the sauce is bubbling.
