Cheesy Chicken Lasagna with Spinach

Yum and thrice yum. How can cheese and chicken not be? There is excessive cheese - I recommend a balsamicy salad with it to cut through the richness.



Ingredients

Sauce

  • 3 tbsp butter

  • 2 tsp minced garlic

  • 3 tbsp flour

  • 2 ½ cups whole milk or single cream

  • Salt to taste

  • ¼ cup grated parmesan

  • 115g cream cheese, softened

Lasagna

  • ¾ cup ricotta cheese

  • 1 egg

  • Lasagna sheets

  • 2 cups cooked chicken, cut into bite size pieces

  • 2 cups grated mozzarella

  • ¼ cup grated parmesan

  • 4 cups baby spinach leaves


Method

  1. Preheat oven to 200C.

  2. Oil an 8x8 baking dish.

  3. Add butter to a saucepan over medium heat and when it’s melted and no longer foaming, stir in the garlic and flour and cook for 30 secs.

  4. Gradually whisk the milk/cream into the pan.

  5. Bring to a simmer and cook until thickened.

  6. Remove from the heat and add the parmesan, cream cheese and spinach.

  7. Stir until the spinach is wilted.

  8. Whisk the egg and ricotta in a small bowl until blended.

  9. Assemble: - 1/4 cup sauce - Lasagna sheets - 1/3 of the ricotta - 1/3 of the chicken - 1/3 of the mozzarella - 1 tbsp parmesan - 1/3 of the remaining sauce

  10. Repeat 2 more layers and sprinkle the top with mozzarella and parmesan.

10. Bake uncovered 20-25 minutes, until the sauce is bubbling.
