Yummy hearty and with a bit of a kick. Mr T made this one.
Ingredients
1 tbsp olive oil
500g Chicken (any kind, chopped)
1 onion, diced
1 red pepper, thinly sliced
2 garlic cloves, crushed
100g chorizo, sliced
1 tbsp Cajun seasoning
300g long grain rice
400g can plum or chopped tomato
350ml chicken stock (add more water towards the end if needed)
Method
Heat 1 tbsp olive oil in a large pan with a lid.
Brown chicken for 5-8 mins until golden then remove and set aside.
Add the diced onion to the pan and cook for 3-4 mins until soft.
Add the red pepper, garlic, chorizo and Cajun seasoning and cook for 5 mins more.
Stir the chicken back in with the rice, add the 400g can of tomatoes and 350ml chicken stock and stir well.
Cover and simmer for 20-25 mins until the rice is tender.
