Chicken Fajitas

As AT always says, everything is better if it's in a wrap. Not a complex recipe but it's good to find your own favourite spice blend.



Ingredients


Fajitas

  • Chicken thighs, cut into strips

  • 2 tbsp olive oil

  • 1 onion, thinly sliced

  • 2 peppers, thinly sliced

  • Mushrooms if you're not married to someone who hates them

  • ½ lime


Seasoning

  • 0.5 tbsp chilli powder (I prefer Kashmiri)

  • 0.5 tbsp ground cumin

  • 1 tsp garlic powder

  • 0.5 tsp paprika

  • 0.5 tsp oregano

  • 0.5 tsp salt

  • 0.5 tsp black pepper


Method


  1. Combine the fajita seasoning ingredients in a bowl.

  2. Mix the chicken in to the fajita seasoning.

  3. Heat the oil in a large skillet over medium heat.

  4. Sear chicken breasts for about 7-8 mins.

  5. Add the peppers and onion to the pan over medium heat and sauté for 4-5 minutes until the chicken is cooked through.

  6. Add a squeeze of fresh lime juice and stir everything together.
