As AT always says, everything is better if it's in a wrap. Not a complex recipe but it's good to find your own favourite spice blend.
Ingredients
Fajitas
Chicken thighs, cut into strips
2 tbsp olive oil
1 onion, thinly sliced
2 peppers, thinly sliced
Mushrooms if you're not married to someone who hates them
½ lime
Seasoning
0.5 tbsp chilli powder (I prefer Kashmiri)
0.5 tbsp ground cumin
1 tsp garlic powder
0.5 tsp paprika
0.5 tsp oregano
0.5 tsp salt
0.5 tsp black pepper
Method
Combine the fajita seasoning ingredients in a bowl.
Mix the chicken in to the fajita seasoning.
Heat the oil in a large skillet over medium heat.
Sear chicken breasts for about 7-8 mins.
Add the peppers and onion to the pan over medium heat and sauté for 4-5 minutes until the chicken is cooked through.
Add a squeeze of fresh lime juice and stir everything together.
