Chicken Ricotta Meatballs in Spinach Alfredo Sauce

I do enjoy a chickeny ball. This dish is excellent although I did get the serving wrong. I mixed the pasta into the sauce but you're supposed to create a bed of pasta and balls then pour the sauce over. May look prettier. Next time I'm doubling the sauce and doing that.


Also my spinach was soggy so I used frozen,


Ingredients

 

For the Meatballs:

  • 1 lb chicken mince

  • 1/2 cup ricotta cheese

  • 1/4 cup grated Parmesan 

  • 1 egg 

  • 1/2 cup breadcrumbs 

  • 2 cloves garlic, minced 

  • Salt and pepper 

  • 1 tbsp Italian herbs 

 

For the Spinach Alfredo Sauce:

  • 2 tbsp butter 

  • 1 clove garlic, minced 

  • 1 cup double cream 

  • 1/2 cup grated Parmesan 

  • 2 cups fresh spinach 

  • Salt and pepper 

 

Additional:

  • 300g Pasta, cooked 


Method


  1. Heat the oven to 180°C.

  2. Combine all ingredients for the meatballs and shape into balls.

  3. Place on a lined baking tray and bake for 20-25 minutes until golden.

  4. Melt the butter, add garlic, then cream and Parmesan and simmer until thick.

  5. Add the spinach, cook until wilted.

  6. Top pasta with sauce and meatballs.
