I do enjoy a chickeny ball. This dish is excellent although I did get the serving wrong. I mixed the pasta into the sauce but you're supposed to create a bed of pasta and balls then pour the sauce over. May look prettier. Next time I'm doubling the sauce and doing that.
Also my spinach was soggy so I used frozen,
Ingredients
For the Meatballs:
1 lb chicken mince
1/2 cup ricotta cheese
1/4 cup grated Parmesan
1 egg
1/2 cup breadcrumbs
2 cloves garlic, minced
Salt and pepper
1 tbsp Italian herbs
For the Spinach Alfredo Sauce:
2 tbsp butter
1 clove garlic, minced
1 cup double cream
1/2 cup grated Parmesan
2 cups fresh spinach
Salt and pepper
Additional:
300g Pasta, cooked
Method
Heat the oven to 180°C.
Combine all ingredients for the meatballs and shape into balls.
Place on a lined baking tray and bake for 20-25 minutes until golden.
Melt the butter, add garlic, then cream and Parmesan and simmer until thick.
Add the spinach, cook until wilted.
Top pasta with sauce and meatballs.
