Chicken Spaghetti

Yummy baked stringy cheesy loveliness. Add jalapenos for an extra kick. Can be made ahead and baked when ready.



Ingredients


  • 500g spaghetti

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 1 pepper, chopped

  • Chicken thighs, sliced

  • 1 tsp Salt

  • 1 tsp Black pepper

  • 1/2 tsp chili powder

  • 3 tbsp butter

  • 3 tbsp plain flour

  • 2 cup whole milk

  • 1 cup chicken stock

  • 2 1/2 cups grated cheddar, divided

  • Freshly chopped parsley to garnish


Directions


  1. Preheat oven to 160°C.

  2. Cook the spaghetti until al dente.

  3. Heat the oil in an oven proof pan over medium heat

  4. Add onion and pepper and cook until soft.

  5. Add chicken and season with salt, pepper, and chili powder.

  6. Cook until chicken is cooked through.

  7. Transfer to a plate.

  8. Melt the butter in the pan over medium heat.

  9. Whisk in flour and cook for 1 minute.

  10. Add the milk and cook until thickened, about 3 minutes.

  11. Stir in the spaghetti, 1.5 cups cheddar, peppers and onions, and chicken.

  12. Top with the remaining cheese and bake until bubbling, about 45 minutes.
