Ingredients
Chicken portions (I like legs for this one)
1/2 cup olive oil
2 tbsp red wine vinegar
1/4 cup finely chopped parsley
3-4 cloves garlic, minced
1 red chili, deseeded and finely chopped (about 1 tbsp)
3/4 tsp dried oregano
1 level tsp coarse salt
Pepper, to taste (about 1/2 teaspoon)
Method
Mix the ingredients to make the chimichurri.
Pat the chicken dry, rub half the chimichurri all over it and let sit for at least 30 minutes, ideally overnight.
Heat oil in a skillet and brown the chicken, skin side down.
Place chicken in a baking tray and bake as per pack timings
Serve with remaining chimichurri spooned over top.
