Chorizo & Mozzarella Gnocchi Bake

Gooey, melty, cheesy, spicy, easy.



Ingredients


  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 200g chorizo, diced or roughly chopped

  • 2 cans chopped tomatoes

  • 1 tsp caster sugar (granulated will do)

  • 500g fresh gnocci

  • 1 tsp basil

  • 150g mozzarella ball, cut into chunks


Method


  1. Heat oven to 180C.

  2. Heat the oil over a medium heat.

  3. Fry the onion and garlic for 8-10 mins until soft.

  4. Add the chorizo and fry for 5 mins more.

  5. Tip in the tomatoes and sugar, and season.

  6. Bring to a simmer, then add the gnocchi.

  7. Cook for 8 mins, stirring often, until soft.

  8. Stir ¾ of the mozzarella and the basil through the gnocchi.

  9. Place mixture into a baking dish.

  10. Top with the remaining mozzarella.

  11. Bake for 5 mins, or until the cheese is melted and golden.
