Coconut Curry Sauce

A nice change of flavour and I love a sauce. Mildly spicy, would be nice on many dishes.



Ingredients

  • 1/2 cup diced shallots

  • 3 tbsp curry powder

  • 2 tsp garlic powder

  • 2 tsp sugar

  • 1 can coconut milk

  • 2 tsp fish sauce


Instructions

  1. Heat some oil over medium heat.

  2. Add the shallots and sauté until soft and brown, about 2-5 mins.

  3. Stir in the curry powder, garlic powder and sugar and fry lightly.

  4. Add the coconut milk and fish sauce and bring to a gently simmer to thicken slightly.
