Creamy Goats Cheese Pasta

This did not look like the original recipe picture. At all. However it tasted surprisingly good. The underlying tomato base had a real intensity. So make it a mid week meal rather than an instagrammable treat.



Ingredients


  • Penne pasta

  • 1 tin crushed tomatoes

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 2 tsp garlic powder

  • 1 tsp oregano

  • 1 tsp salt

  • 2 cups baby spinach leaves or chopped spinach

  • 8 fresh basil leaves or 1 tbsp dried basil

  • 100g goats cheese


Method


  1. Cook the pasta.

  2. In a large pan mix the crushed tomatoes, olive oil, balsamic vinegar, garlic powder, oregano, salt, spinach and whole basil leaves.

  3. Simmer and cover while the pasta cooks (for at least 10 minutes).

  4. Drain the pasta, reserving a cup of pasta water.

  5. Crumble the goat cheese into the sauce.

  6. Add the pasta.

  7. Stir until a creamy sauce forms, adding pasta water as needed.
