Creamy Tequila Chicken Pasta

Got this one from http://twochubbycubs.com/ who I'm a little bit obsessed with. Originally a slimming world recipe but I've put some fat back in with full fat Philly and no Quark.




Ingredients


  • Pasta

  • Chicken thighs/breast/whatevs

  • 1 tbsp garlic, minced

  • 1 tbsp jalapeños, chopped

  • 175ml chicken stock

  • 2 tbsp tequila (optional)

  • 2 tbsp lime juice

  • 150g Philadelphia

  • 1 red onion, sliced thinly

  • Handful of sweet peppers, sliced

  • 3 tbsp soy sauce

  • Salt

  • 1 tbsp butter


Method


  • Bring a pan of water to the boil and cook the pasta

  • Heat oil to a small pan and add the garlic and jalapeños and cook for a few minutes

  • Add the chicken stock, tequila and lime juice, increase the heat and cook until it’s reduced and a bit gloopy

  • Remove from the pan and leave to cool for a few minutes, then stir in the Philadelphia and soy sauce. Looks a bit manky at this point but bear with.

  • In a large pan brown the chicken, sprinkle over the salt

  • Add the peppers and onion and continue to cook

  • Add the sauce to the chicken and stir in

  • Add the drained pasta and stir in,

  • Stir butter through
