Got this one from http://twochubbycubs.com/ who I'm a little bit obsessed with. Originally a slimming world recipe but I've put some fat back in with full fat Philly and no Quark.
Ingredients
Pasta
Chicken, chopped
1 tbsp garlic, minced
1 tbsp jalapeños, chopped
175ml chicken stock
2 tbsp tequila (optional)
2 tbsp lime juice
150g Philadelphia
1 red onion, sliced thinly
Handful of sweet peppers, sliced
3 tbsp soy sauce
Salt
1 tbsp butter
Method
Bring a pan of water to the boil and cook the pasta
Heat oil to a small pan and add the garlic and jalapeños and cook for a few minutes
Add the chicken stock, tequila and lime juice, increase the heat and cook until it’s reduced and a bit gloopy
Remove from the pan and leave to cool for a few minutes, then stir in the Philadelphia and soy sauce. Looks a bit manky at this point but bear with.
In a large pan brown the chicken, sprinkle over the salt
Add the peppers and onion and continue to cook
Add the sauce to the chicken and stir in
Add the drained pasta and stir in,
Stir butter through
