Creamy Turmeric Pasta

This is mega easy but SUPER rich. You do not need garlic bread with it, especially not a garlic bread wrap. Go for salad. This is really good if you like a creamy pasta but with a bit more flavour.


Ingredients

 

  • 500g spaghetti

  • 2 tbsp unsalted butter

  • 1 large shallot, thinly sliced

  • 2 garlic cloves, thinly sliced

  • Salt and black pepper

  • 1½ tsp ground turmeric

  • 1 cup single cream

  • 2 cups grated Parmesan.

  • 4 tbsp finely chopped fresh parsley or chive

 

Method

 

  1. Cook spaghetti and drain, reserving 1 cup of pasta water.

  2. Melt butter in a large pan and add the shallot, garlic, salt and pepper and cook until golden-brown, 3 to 4 mins.

  3. Add turmeric and stir to toast, about 30 secs.

  4. Slowly whisk in the cream then bring to a simmer.

  5. Whisk in the 2 cups of Parmesan.

  6. Add the cooked spaghetti and reserved pasta cooking liquid and toss to coat.

  7. Mix in chopped herbs.
