I've been on a bit of a frying blitz, having never really deep fried before. These prawns were good as, unlike in a lot of battered prawn recipes, you could taste the seasonings. For the sauce I used an Asian take on a cocktail sauce which is a bit sweeter.
Ingredients
King prawns
Marinade
2 tbs mustard
1 tsp paprika
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric
1 tsp black pepper
Salt
2 garlic cloves, minced
2 tbs lemon juice
Coating
1 cup plain flour
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
Salt
1 egg, beaten
Sauce
3 heaped tablespoons mayonnaise
2 tbsp condensed milk
1 1/2 tbsp ketchup
1/4 tsp salt
1 dash white pepper
2 tsp lemon juice
Method
Marinate prawns in the marinade mix for at least 30 mins.
Coat prawns with flour mix then dip into the egg then again in the flour mix.
Repeat until sufficiently coated.
Fry in oil a deep pan at high heat for 3 minutes until golden.
Prepare the sauce by mixing all ingredients.
