Diane Sauce

I have a Diane-ish sauce on here which I've made up over the years. This is a proper recipe by a real chef. It's a really good sauce that doesn't need to many ingredients (or mushrooms, which some do and I didn't have).


Ingredients

 

  • 25g butter

  • 1 shallot, finely diced

  • 60ml double cream

  • 2 tbsp brandy

  • 1 tbsp Worcestershire sauce

  • 1 heaped tbsp freshly chopped parsley

  • Salt and pepper to season

 

Instructions

 

  1. Heat the butter and allow to melt on a medium heat.

  2. Add the diced shallots and fry for a few mins until translucent.

  3. Add the cream, brandy and Worcestershire sauce and allow the mixture to come to a quick boil.

  4. Add the parsley, salt and pepper, stir.

  5. Place the steaks in the sauce to coat and pour over.
