Easy Rice Pilaf

While this looks very much like my recipe for Turkish Rice the flavour is much different. Turkish is plainer so suits most dishes, this is much more rich in flavour so best served with flavours that cut through that, such as piccata or sun dried tomato recipes.



Ingredients


  • 2 tbsp butter

  • 1/2 cup orzo pasta

  • 1/2 cup onion, diced

  • 2 cloves garlic, minced

  • 1/2 cup white long grain rice

  • 2 cups chicken stock

  • 1 tsp salt

  • ½ tsp parsley

  • ¼ cup parmesan, grated


Instructions


  1. Melt butter in a large pan.

  2. Add orzo pasta and cook until golden brown.

  3. Stir in onion and cook until onion becomes translucent.

  4. Add garlic and cook for 1 minute until fragrant.

  5. Add in the rice and stir to coat with oil.

  6. Add chicken stock, salt, and parsley.

  7. Stir well and bring to a boil.

  8. Reduce heat to medium-low, cover with lid and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.

  9. Remove from heat and let stand for 5 minutes.

  10. Stir in parmesan, then fluff with a fork.
