We travel to Greece a lot and I love everything about the cuisine. I really don't think you can buy a manufactured tzatziki in the UK that tastes authentic so you really need to make it from scratch.
Ingredients
250g Greek yogurt
1.5 tbsp red wine vinegar
1 tbsp extra virgin olive oil
Fresh dill
1/2 cucumber
1 garlic clove, minced
I tsp sea salt flakes
Method
Half the cucumber lengthways and scrape out the seeds
Grate the cucumber into a sieve
Rub the sea salt into the cucumber and leave to drain over a bowl for 10 mins
Mix the yogurt, olive oil, red wine vinegar, dill and garlic together in a bowl
Squash the cucumber into the sieve to remove as much liquid as possible then mix into the yogurt
Drizzle with extra olive oil
We like to have Greek nights, as well as the tzatziki I recommend the butter herb rice or the Turkish rice to match.
