Garlic butter lobster tails

I'm fairly new to lobster and first tried it in Whitby where all seafood is excellent so I was wary about doing it at home. I bought some lobster tails to ease myself in. Winner!



Preparing the lobster was interesting but I followed these instructions and it worked well.


  1. With the shell facing up, cut down through the centre of the back all the way to the end of the tail, leaving tail fan intact.

  2. Turn the shell over and break the ribs by pressing the centre of each

  3. Turn back over and with your thumbs, open the shell to loosen it from the meat, pulling the meat away from the shell side walls.

  4. Carefully pull the meat up from the bottom of the shell and sit the meat on top (should still be attached at the tail).


Cooking


  • Preheat oven to 200C

  • Prepare a mix of butter, garlic and parsley (microwave for 20 seconds to melt, add parsley after heating)

  • Pour half of the butter mix onto the tail and bake in the oven for 6 minutes

  • Pour the rest of the butter mix over the tails and bake for a further 6 minutes.

  • I served with a bit of garlic aioli on the side because that's what Cote do :)

  • Feel posh
