Pimped up my spuds!
Not exactly a recipe but something new to do with your potatoes.
Ingredients
Potatoes
1 onion, cut in half
4 cloves garlic, peeled
2 spoons goose fat
Method
Bake the potatoes in the microwave until almost done
Cool a bit
Heat the goose fat in a 200C oven
Add the potatoes, onion and garlic and roast for approx 15-20 minutes. Time really depends on how cooked your potato was and how crispy you want the skin but it doesn't harm to do it for longer. Don't do it for less as the flavour won't infuse.
Turn regularly to get crispy on all sides.
I threw some broccoli in for the last 10 minutes to roast.
