Grilled Parmesan Broccoli

I grill this due to most of my other recipe being for roasting or frying. You could, however, do that instead. The main point is to make broccoli better by adding crispy cheesy bits.



Ingredients


  • Tender stem broccoli or broccoli florets

  • 2 tablespoons freshly squeezed lemon juice

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 2/3 cup grated Parmesan cheese

  • 1/4 teaspoon red chilli flakes (optional)

  • Finely grated zest of 1 medium lemon

I didn't use chilli flakes for the pictures as I was serving with a chilli marinated steak and chimichurri - chilli overload!


Instructions


  1. Whisk the lemon juice, oil, and salt together in a large bowl.

  2. Add the broccoli and toss to combine.

  3. Sprinkle with the cheese and red pepper flakes if using and toss until the broccoli is thoroughly coated.

  4. Set aside at least 20 minutes, tossing occasionally.

  5. Using tongs, place the broccoli on the grill pan in a single layer.

  6. Place under the grill and cook, flipping the broccoli every 2 1/2 minutes, until crisp-tender, about 10 minutes total.

  7. Transfer to a serving bowl, sprinkle with the zest, and toss to combine.
