Homemade Hamburger Helper

Strap in for this one. It started with an American website I buy Ranch dressing from. I saw strangely named packets of food - Hamburger Helpers - boxes of dried pasta with seasoning to be cooked with minced beef (flavours include Lasagna, Cheeseburger Macaroni, Bacon Cheeseburger, Philly Cheesesteak etc). I googled it to find out why it was called that. Google gave me recipes. I went down the rabbit hole....


Mixed reviews in our house, Alix loved it (and I mean LOVED), I wasn't keen, I feel like it needs other burger elements like pickles for freshness, or maybe jalapenos. I think it was over ingrediented too - not sure what some of it added. My brain couldn't comprehend it. You like what you like. Will make for him again in smaller quantities.



Ingredients

  • Vegetable oil

  • 1 large onion, diced

  • Salt and black pepper

  • 3 garlic cloves, minced

  • 5 strips smoked bacon, finely chopped

  • 500g minced beef

  • 1 cup dry white wine

  • 3 cups chicken stock

  • ¾ cup double cream

  • 1 tsp smoked paprika

  • 1 bay leaf

  • 1 tbsp ketchup

  • 1 tbsp american mustard

  • 300g pasta (ideally macaroni)

  • 1.5 cups grated cheese (cheddar or mixed) and 5 cheese slices ripped up

  • ¼ cup finely chopped chives

  • Maybe add pickles or jalapenos?


Method

  1. Heat a large pan over medium heat and add oil and onion.

  2. Season with salt and pepper.

  3. Cook until the onions begin to caramelise.

  4. Add garlic and cook until fragrant, about 2 mins.

  5. Add bacon and minced beef and continue to cook until the liquid has mostly evaporated.

  6. Drain off most of the fat, leaving a little in the pan to keep the meat moist.

  7. Increase heat to high and add white wine, reducing until almost dry, about 10 mins.

  8. Add the stock, cream, paprika, ketchup, mustard and bay leaf.

  9. Mix until combined and bring to a boil.

  10. Add the pasta and cook until al dente, stirring often.

  11. Reduce the heat to low and stir in the cheese, stirring until melted.

  12. Remove the bay leaf, stir in chives and season to taste with salt and pepper
