Homemade Limoncello

I love lemoncello. Was curious to know if homemade was better.



Ingredients


  • 5 unwaxed lemons

  • 1l bottle vodka

  • 750g caster sugar

  • 700ml boiling water

Method


  1. Peel the zest from the lemons, taking care not to include any white pith.

  2. Put the zest in a large clean jar and pour over the vodka.

  3. Cover with a tightly fitting lid and leave for a week, shaking the jar each day.

  4. Put the sugar in a heatproof bowl and pour over the boiling water, stirring until the sugar has dissolved.

  5. Add the vodka and peels and leave for a further week, shaking the jar regularly.

  6. Strain into bottles, adding a few strips of lemon zest to each bottle.


Tip! Do not do what I did and put the first batch in a bottle, use a jar. I didn't read ahead and you have to add the zest to the second step. I spent a good hour trying to get it out of the bottle.
