I don't like Christmas cake. Or Christmas pudding or mince pies or pretty much any festive dessert. One of my best best friends used to make me a ginger cake for Christmas but then rudely moved to the other end of the country. Happily she shared the recipe and I didn't ruin it! Christmas is saved.
Ingredients
125g unsalted butter
225g golden syrup
200g Plain flour
150g self raising flour
1 tsp bicarbonate of soda
2 tsp mixed spice
1 tsp ground ginger
165g light brown sugar
225ml milk
2 large eggs lightly beaten
Pinch of salt
Method
Sift flour, bicarbonate of soda and spices into a bowl.
Stir in the sugar and salt.
Add the milk and eggs and mix until smooth.
Melt the butter and syrup together and gradually add in to the mixture.
Bake at 180C for 55 minutes.
