Jalapeno Popper Chicken (air fryer version)

I am not exaggerating when I say these are incredible. I thought the cheese would leak out, I was wrong. Apologies for the picture, I forgot. You're just going to have to trust me on how great they are. More ingredient heavy, oven version to follow.



Ingredients


  • 225g cream cheese

  • 1/2 cup grated cheddar cheese

  • 1/3 cup minced jalapeños

  • 4 chicken escalopes (flattened breasts)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 cup panko breadcrumbs - seasoned (I didn't have any so I used golden - was fine)

  • For the seasoning you can use any flavours you liked. I literally used up a spare packet from the old el paso packs for ease!


Method


  1. Combine cream cheese, cheese, and minced jalapeño.

  2. Season escalopes with salt and pepper

  3. Scoop the cheese mixture into the centre of each chicken.

  4. Spray lightly with olive oil.

  5. Roll in seasoned breadcrumbs.

  6. At this point place in the fridge for at least 30 mins to help keep the cheese inside while cooking.

  7. Cook in air fryer at 200C until cooked through (10-15 mins depending on how much you bashed the chicken).
