Plus an exciting new tool! I've already posted the chow mein part of this with chicken, but I wanted to share this one as I've been using this excellent website to understand how Chinese restaurants prepare their proteins.

Prepare the Prawns
Ingredients
Prawns (peeled and deveined)
2 tablespoons sugar
1 tablespoon salt
1 teaspoon baking soda/bicarbonate of soda
1 cup ice water
1 cup ice
Instructions
Place your prawns into a large mixing bowl, and add sugar, salt and baking soda.
Gently massage the ingredients into the prawns.
Add ice water and ice to the bowl, and stir everything together.
Place them in the fridge for 1-2 hours, or even overnight.
To use, run cold water into the bowl, gently stir the prawns, and pour the water out. Repeat this twice to remove excess salt, sugar and baking soda.
Drain.
Before we move on to the cooking, I have an exciting new tool! I think I first saw it on an insta ad then found it cheaper on ebay. I wasn't expecting much for less than a fiver but it works really well. Behold my spring onion shredder, ahhhh! (probably works on other foods too).
To Make the Chow Mein
Ingredients
Prawns, prepared as above
4 tablespoons dark soy sauce
4 tablespoons light soy sauce
4 tablespoons oyster sauce
1 tablespoon cornflour
Egg noodles
3 tablespoons sesame oil
2 cloves garlic, grated
1 onion, sliced
1 bag beansprouts
3 spring onions, chopped into 2cm pieces
1 teaspoon sugar
Method
Mix prawns in 1 tablespoon dark soy sauce, 1 tablespoon light soy sauce, 1 tablespoon oyster sauce and cornflour
Cook noodles (if not fresh) according to packet instructions. Run under cold water to prevent sticking.
Heat oil and fry prawns until almost cooked.
Remove prawns and increase heat.
Add garlic and onion and cook until softened slightly, then add beansprouts, spring onions, cooked noodles and the meat.
Stir and add the remaining dark soy sauce, light soy sauce, oyster sauce, and sugar.
