Lamb Chops with Herb Caper Sauce

I made a lot of potatoes with these as let's face it, whilst delicious, lamb chops do not provide meat in bulk.



Ingredients


  • 4 lamb chops

  • 1/4 cup olive oil, plus more to sear the lamb

  • 2 tbsp shallot, finely chopped

  • 1 tsp garlic, minced

  • 1 tbsp lemon juice

  • 1/2 tsp lemon zest

  • 1 tbsp capers

  • 2 tbsp mint, minced (dried will do, use 1 tbsp)

  • 1 tbsp parsley, minced

Method


  1. Heat the oil on medium-high heat in a large skillet.

  2. Add lamb chops and cook to your liking. I do about 4 minutes on one side, then 4 minutes on the other.

  3. Rest the chops while you make the sauce.

  4. Heat the olive oil in a pan.

  5. Add the shallot and garlic and cook over medium-low heat, stirring occasionally, for about five minutes.

  6. Turn the heat to low and add the lemon juice, zest, and capers.

  7. Just before serving, stir in the mint and parsley.
