Lemony Chicken Schnitzel

Classic, easy, tasty. I did have the recipe to make my own caesar dressing but I can't be battling with anchovies so I just used a supermarket kit and made some potato salad for carbs.



Ingredients


  • 2 skinless chicken breasts

  • 30g plain flour

  • Seasoning for flour (I used all purpose)

  • 1 egg, beaten

  • 50g panko breadcrumbs

  • 3 tbsp vegetable oil

  • 20g butter

  • 1 lemon, juiced

 

Method


  1. Place a chicken breast between two sheets of cling film and flatten with a rolling pin until about 1cm thick

  2. Put the flour, eggs and breadcrumbs in three shallow bowls.

  3. Season the flour and mix well.

  4. Dip the chicken breasts into the flour, then the egg, then the breadcrumbs.

  5. Heat the oil and butter in a frying pan, add the chicken and fry for 3-4 mins until golden.

  6. Turn over and cook for a further 3 mins until cooked through.

  7. Tip the lemon juice into the pan, sizzle, then spoon over the schnitzels.

  8. Leave to rest for 4 mins.
