Macaroni Salad

When you bulk bought macaroni to make mac and cheese and have a tonne left..... This is a great alternative salad for BBQs.



Ingredients


These quantities make a large batch so unless it's for a BBQ or you want it on the side of everything for a week you should probably half it.


Salad

  • 250g macaroni

  • 1/2 medium red pepper, seeded and finely chopped

  • 1/2 medium red onion, finely diced

  • 1 small carrot, peeled and shredded - I use a vegetable peeler to create thin slices then chop them

  • 1/4 cup dill pickles, finely chopped

  • 2 hard boiled eggs, diced

This tool is perfect for the chopping in this recipe. You can choose other veg. Most mac salad recipes contain celery but as it's disgusting I left it out.


Dressing

  • 1 cup mayonnaise

  • 1/4 cup sour cream

  • 1 tbsp pickle juice (from the jar)

  • 1 tbsp Dijon mustard

  • 1 1/2 tsp sugar

  • 1/4 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp black pepper

For the one in the picture I also added a tbsp on Sweet Pickle Relish relish as I'm a bit obsessed. See the Big Mac Sauce recipe for various pickles.


Method


  1. Put the macaroni on to cook.

  2. Prepare/chop the salad ingredients and add them to a large serving bowl.

  3. Mix the dressing ingredients together in a small bowl.

  4. Once pasta is cooked, drain and rinse under cool running water.

  5. Drain well, add to the salad ingredients in the large serving bowl and mix.

  6. Pour over the dressing and toss to combine.

  7. Adjust salt and pepper to taste.
