Marinated Thai Chicken (Gai Yang)

This chicken is absolutely banging and so easy. Stick it in a bag then cook!



Ingredients


  • Chicken, any type, on the bone or not. I used thighs.

  • 1 large lemongrass stalk , white part only very finely chopped

  • 6 cloves garlic , minced

  • 2 tbsp lime juice

  • 2 tsp finely chopped red chili

  • 3 tbsp fish sauce

  • 2 tbsp Shaoxing Wine

  • 1 tsp sesame oil

  • 3 tbsp brown sugar

  • 2 tbsp honey

  • 1/2 tbsp black pepper

Method


  1. Place Marinade ingredients in a large sandwich bag and massage to mix.

  2. Add the chicken into the sandwich bag and massage to spread the marinade over all the chicken.

  3. Marinate for a minimum of 3 hours, preferably overnight (up to 24 hours).

  4. Remove chicken from the Marinade and discard the Marinade.

  5. Heat 1/2 tbsp oil in a non stick pan over medium high heat.

  6. Cook the chicken until golden brown and cooked through

  7. Rest for a few minutes before serving.
