McDonald's Style Breakfast Muffins

These are really close to the really thing and can be batch made and cooked from frozen.



Muffins generally come in packs of 4 or 6 so it's great to be able to freeze them for a quick and easy breakfast when heading out to work (or when you have a hangover).


Ingredients (to make 6)


  • 10 large eggs

  • 1 cup whole milk

  • 1 teaspoon salt

  • Sausage patties or sausage meat shaped into patties

  • 6 slices bacon (optional)

  • 6 slices cheese, like cheddar or Swiss BUT cheap cheese slices are most authentic

  • 6 English muffins


Instructions


  1. Make the eggs: Whisk the eggs together with the milk and salt in a large mixing bowl. Film baking tray with cooking spray and pour the eggs into it. Bake until the eggs are puffed around the edges with golden spots, and a knife inserted in the middle comes out clean, 25 to 30 minutes. Be free and easy with your egg types - I've also made unscambled eggs in a frying pan and cut rounds from that. I'm currently experimenting with egg rings and creating a bain-marie style poached egg. Will report back.

  2. Make the bacon or sausage as normal

  3. Slice the cheese (or unwrap the slice!)

  4. Toast the English muffins

  5. Cut out the egg rounds. I use a scone cutter to cut them out. Use a spatula to lift the eggs out of the tray.

  6. Assemble the sandwiches


You can freeze the extra!


  1. Wrap each sandwich in a square of kitchen roll. Use a permanent marker to write the contents and date on the sandwich. Put all the sandwiches in a freezer bag or container. You can be extra fancy and instead of putting them in a bag wrap each one in freezer paper and write on that.

  2. Freeze for up to 1 month.


Reheating instructions


  1. Unwrap the frozen sandwich and place on a microwave-safe plate lined with a paper towel (the towel helps absorb some of the melting ice so the bread doesn't get soggy).

  2. Heat at full power for 1 to 3 minutes, or until the cheese is melted and the egg is warmed through. It's a wide cooking range because it depends what you put in it.. Sausage needs longer that bacon.


Tip!: I tried hash browns in them and they don't work at all. They take too long to defrost and ruin the sandwich.
