Mexican Rice

Needed a side to go with carne asada steak, chimicchuri and queso so made this really easy Mexican rice.



Ingredients

  • 1 cup long grain white rice

  • 2 cups chicken stock

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 4 cloves garlic, minced

  • 1/4 cup tomato paste

  • 1 tbsp lime juice

  • 1/4 cup coriander leaf

  • 2 tsp cumin

  • Salt to taste

Method

  1. Cook the rice in the chicken stock (I used a rice cooker).

  2. While the rice is cooking, heat the olive oil in a large pan over medium heat.

  3. Cook the onions for 10 mins, until translucent and starting to brown.

  4. Add the garlic to the skillet and cook for one minute, stirring constantly.

  5. Stir in the tomato paste and cumin and cook for another minute or two.

  6. Mix in the cooked rice, lime juice and coriander.

  7. Mix until well combined.

  8. Season to taste with salt.
