Mozzarella Onion Rings

I am posting these pictures with a sense of shame as it looks like these were made by a one handed raccoon, but the recipe is great!



If I am going to have a vino or two prior to (and during) cooking a meal I'll do all the prep in advance. On this particular Sunday I had done that and we settled down with a bottle of Pinot Gris. A couple in I thought, I know what will make our meal extra excellent - mozzarella onion rings! I should have really waited until a time I wouldn't have hacked the onions into giant hula hoops or got more breadcrumbs on me than the rings.


That said, they were still good and I will make again, but better.


Ingredients


  • 2 large white onions

  • 3–4 slices mozzarella cheese

  • 2 cups flour

  • 5 eggs

  • 2 cups bread crumbs

  • Oil, for frying

I only used 1 onion so halved this recipe.


Instructions


  1. Peel and cut onions into 1cm rings (not paddling pools for hamsters), then separate the rings.

  2. Slice the mozzarella into even strips

  3. Place a smaller onion ring in the center of a larger one and fill the gap between the rings with strips of mozzarella. Repeat with remaining onion rings and freeze them for 1 hour.

  4. Place the flour, eggs, and breadcrumbs into three separate bowls.

  5. Coat each prepared ring in the flour first, then the egg, then the breadcrumbs, then the egg again, and one last time into the breadcrumbs.

  6. Repeat with the remaining onion rings and place back in freezer.

  7. Fill a large pot with oil and set over medium high heat until a breadcrumb sizzles when you drop it in.

  8. Fry the rings until golden brown.

  9. Drain on a paper towel.

  10. Sober up and try again.
