I love mushroom soup in the winter served with warm crusty bread.

Ingredients
2 onions, finely sliced
60g butter
2 cloves garlic, minced
500g mushrooms
¼ cup plain flour
2 1/4 cups milk
1 ½ cups beef stock
Method
Fry off onion and garlic in butter
Add mushrooms and cook for 5 minutes
Add flour and stir
Add milk and stock and stir until combined
Bring to the boil and simmer for 15 minutes
Allow to cool a bit then blend
Pour back into pan to reheat and finish with a swirl of soured cream to make people think you are fancy.
