Mushroom Soup

I love mushroom soup in the winter served with warm crusty bread.



Ingredients


  • 2 onions, finely sliced

  • 60g butter

  • 2 cloves garlic, minced

  • 500g mushrooms

  • ¼ cup plain flour

  • 2 1/4 cups milk

  • 1 ½ cups beef stock


Method


  1. Fry off onion and garlic in butter

  2. Add mushrooms and cook for 5 minutes

  3. Add flour and stir

  4. Add milk and stock and stir until combined

  5. Bring to the boil and simmer for 15 minutes

  6. Allow to cool a bit then blend

  7. Pour back into pan to reheat and finish with a swirl of soured cream to make people think you are fancy.
