Who doesn't love a toastie? They deserve a bit of pimping now and again.
Ingredients (to make 1 sandwich)
2 medium–thick slices bread
Butter
1 slice ham
Sliced gherkins (optional but breaks through the richness of the cheese)
1/2 tbsp soured cream
1/2 tbsp finely chopped chives or ½ finely chopped spring onion
25g grated cheddar, emmental, gruyère or red leicester (or a mixture)
Method
Butter each slice of bread on one side.
Make a filling by mixing the soured cream with the chives or spring onion.
Stir in the grated cheese.
Place the bread slices on a chopping board, buttered-side down.
Spread one with the cheese filling and lay the ham and gherkins on top of the other. In my pictures I added a cheeky extra slice of cheddar and used emmental in the filling. Go wild with your cheeses!
Put the cheesy-spread piece of bread on top of the other slice, buttered-side up.
Heat a large frying pan over a medium heat.
Put the sandwiches in the pan and fry for about 3 minutes on one side, pressing down lightly with a spatula every so often.
Carefully turn over and fry for a further 2 minutes or until crisp and golden.
