An Alix dish! He did not wish to use the macaroni so it's fajita cappalletti and cheese. The flavour in this was excellent, had seconds.
Ingredients
Olive oil
500g chicken, chopped
1 tbsp chicken seasoning
2 tbsp fajita seasoning
1 onion, finely diced
3 peppers, finely diced
3 garlic cloves, minced
300g pasta, uncooked
400ml chicken stock
600ml milk
1 tsp Dijon mustard
150g grated cheese
Parsley to garnish
Method
Season the chicken with the chicken and fajita seasoning.
Fry in olive oil OR air fry until cooked through and set aside.
Add a bit more oil and fry off the onions and peppers.
Add in the garlic and cook for 1 more min.
Stir in the uncooked pasta.
Add in the stock and milk and cook until the pasta is soft and the mix is creamy.
Add the mustard and cheese and mix until melted through.
Add the chicken back in and sprinkle with parsley.
