Salt & Pepper Chicken Wings

I cannot explain how good these are. Just like the take away! MSG is optional but it really is a great flavour enhancer.



Ingredients

Wings

  • 12 chicken wings

  • Water to cover wings

  • 3 tbsp plain flour

  • 1.5 tbsp potato starch

  • 2.5 tsp salt

  • 0.5 tsp MSG

  • 0.5 tsp ground sand ginger

  • ¼ tsp ground ginger

  • ¼ tsp five spice

  • ¼ black pepper

  • 1 egg white

  • 1 tbsp light soy sauce

  • 2-3L veg oil for frying

Seasoning

  • ¼ tsp five spice

  • ¼ tsp ground sand ginger

  • ¼ tsp garlic powder

  • 0.5 tsp black pepper

  • 0.5 tsp salt

  • 0.5 tsp MSG

Vegetables

  • 0.5 tsp salt

  • 1 tsp MSG

  • 1 pepper, chopped

  • 4 cloves garlic, chopped

  • 1 carrot, ribboned

  • 1 onion, chopped

  • 2 tbsp veg oil


Method


  1. Cut each chicken wing into 2 pieces at the joint.

  2. Place in a bowl and add 2 tsp salt and cover with water.

  3. Soak for 2-3 hours in fridge.

  4. Make the seasoning by mixing all ingredients together in a bowl.

  5. Place 0.5 tsp salt and all the dry ingredients from the wing list into a bowl and mix well to create the spicy flour coating.

  6. Drain the wings and place in a mixing bowl.

  7. Whisk up the egg whites and pour over chicken wings.

  8. Add the soy sauce and mix.

  9. Heat the oil.

  10. Sprinkle the wing flour mix over the wings and mix well.

  11. Fry the wings for 6-8 minutes until cooked through then drain on kitchen paper.

  12. Heat oil in a wok and fry off the onions, peppers and carrots.

  13. Create a well and add the salt and MSG and let is sit for 20-30 seconds, mix in.

  14. Add the garlic and fry off for a few seconds before adding the wings to the wok.

  15. Shake the Seasoning into the wok and mix until combined.

  16. If the seasoning isn’t sticking to the wings add more oil.
