I've been trying to figure out the best way to make these for a while and thanks to my friend Richard, I think this is it. My doesn't look as good as his but meh, it tasted good.
Ingredients
Raw prawns (fresh or frozen and defrosted)
1 tbsp cornflour
1 tsp back pepper
1 tsp szechuan pepper
1 tsp salt
2-3 chillies. Adjust the heat using the chillies.
2 large garlic cloves per portion, chopped
3 spring onions
1 sweet pepper
Chopped shallots if available
Method
Mix the cornflour, peppers and salt
Toss the prawns in the mix
Shallow fry the prawns for about 90 seconds, remove and drain
Stir fry the other ingredients until starting to brown. Try to get the shallots and garlic crispy.
Add the prawns and toss together for a minute
Musings
Don't be confused by the chicken in the pictures. I also made chicken for AT but it wasn't as good. Going to work on that separately.
I had a cornflour explosion and I think I used too much. Don't do that.
If using vegetables you have frozen, remember that oil and water don't mix. You may have a small fire. Style it out as flambaying.
