Simple Risotto

A nice, ingredient light easy risotto which makes a great base to showcase meat dishes.



Ingredients


  • 5 cups chicken stock

  • 3 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 cups arborio rice

  • 1/2 cup dry white wine

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp unsalted butter

  • Frozen peas, optional for freshness.

  • Salt and pepper, to taste


Method


  1. Heat the oil and cook the onion and garlic until soft.

  2. Stir in the rice, keep stirring until coated.

  3. Add wine and stir until absorbed.

  4. Add the stock a cup at a time, stirring until absorbed.

  5. If using, add peas when the rice is almost cooked.

  6. When the rice is done remove from the heat and stir in the cheese and butter until melted.
