Tempura Prawns

In a week of frying thngs, we also did prawns. They were definitely better than the frozen kind, not as good as a resturant. Drizzled with yum yum sauce.


Ingredients

 

  • Ebi prawns (or king prawns)

  • 1 cup plain flour

  • 1 large egg

  • 1 cup water

 

Method

 

  1. Sift the flour and set aside.

  2. In a medium bowl gently beat the egg until the yolk and egg whites are just barely incorporated.

  3. Combine 1 cup water and ice cubes in a cup.

  4. Strain the water into the bowl with the beaten egg.

  5. Add the flour and gently stir using chopsticks until just combined. Be careful not to overmix the batter; it should be a little lumpy.

  6. Heat the oil, coat each prawn in the batter and fry for about 2 mins per batch, until the prawn is cooked and the batter crisps.
