Thai Coconut Red Curry with Prawns

Super fast for a midweek dinner. Comes with free lemongrass pro tip. You are welcome.



Ingredients

  • Raw king prawns

  • 1 tbsp vegetable oil

  • 2 tbsp Thai red curry paste

  • 1 can of coconut milk

  • 1 tbsp dried lemongrass OR (pro tip) 1 stalk of lemongrass = 1 tbsp of lime zest + 1 Kaffir lime leaf + 2 tbsp of lemon juice

  • 1 tbsp brown sugar

  • 1-2 cups green beans

  • 2 peppers, thinly sliced

  • 2 tbsp Thai fish sauce

  • 1 tbsp fresh lime juice

  • 1 tbsp fresh basil leaves/1 tsp dried basil


Method
  1. Heat oil in a lar

  2. ge pan on medium heat.

  3. Add the red curry paste and cook for 30 seconds.

  4. Stir in coconut milk, lemongrass and brown sugar.

  5. Cover and cook for 5 minutes.

  6. Add the prawns, green beans and peppers.

  7. Cook uncovered for 4-5 minutes until prawns are cooked.

  8. Take off the heat and add the fish sauce, lime juice and basil.

  9. Let it rest for 5 minutes and serve.
