Ingredients
Raw king prawns
1 tbsp vegetable oil
2 tbsp Thai red curry paste
1 can of coconut milk
1 tbsp dried lemongrass OR (pro tip) 1 stalk of lemongrass = 1 tbsp of lime zest + 1 Kaffir lime leaf + 2 tbsp of lemon juice
1 tbsp brown sugar
1-2 cups green beans
2 peppers, thinly sliced
2 tbsp Thai fish sauce
1 tbsp fresh lime juice
1 tbsp fresh basil leaves/1 tsp dried basil
Method
Heat oil in a lar
ge pan on medium heat.
Add the red curry paste and cook for 30 seconds.
Stir in coconut milk, lemongrass and brown sugar.
Cover and cook for 5 minutes.
Add the prawns, green beans and peppers.
Cook uncovered for 4-5 minutes until prawns are cooked.
Take off the heat and add the fish sauce, lime juice and basil.
Let it rest for 5 minutes and serve.
