Toad in the Hole

Pimp up your Yorkshire with a sausage or two! I like mine with creamy mash, onion gravy and maybe something green.

Ingredients

  • Sausages

  • Goose fat or beef dripping (or vegetable oil if you must)

EQUAL PARTS - in bulk, not weight (I go to the 200ml mark on a jug):

  • Eggs

  • Plain Flour

  • Whole Milk

  • Pinch of salt

  • Pinch salt and pepper

Method

  1. Preheat the oven to 180C.

  2. Whisk the flour, eggs, milk, salt and pepper.

  3. Refirdgerate for 30 mins to overnight.

  4. When ready to cook, take the mix out to come to room temperature.

  5. Preheat the oil in a baking dish.

  6. Bake the sausages for 20 mins.

  7. Open the oven and pour the batter in quickly.

  8. Cook for another 20-25 mins.
