Mr T made this for a breakfast recipe but it made a lot and was so delicious we ended up eating it on crackers, cheese, sandwiches etc.
Method
350g chopped tomatoes
1 red chilli, finely chopped (deseeded if you don't want much spice)
1 thumb sized piece of ginger , grated
1 star anise
200g caster sugar
150ml red wine vinegar
Ingredients
Put all the ingredients in a pan, season and simmer for 30 mins until you have a rich, thick glossy jam.
Scoop out the star anise.
Cool, then transfer to a jar
It will keep, unopened, for six months and a couple of weeks once opened.
