Tomato Chilli Jam

Mr T made this for a breakfast recipe but it made a lot and was so delicious we ended up eating it on crackers, cheese, sandwiches etc.



Method


  • 350g chopped tomatoes

  • 1 red chilli, finely chopped (deseeded if you don't want much spice)

  • 1 thumb sized piece of ginger , grated

  • 1 star anise

  • 200g caster sugar

  • 150ml red wine vinegar

Ingredients


  1. Put all the ingredients in a pan, season and simmer for 30 mins until you have a rich, thick glossy jam.

  2. Scoop out the star anise.

  3. Cool, then transfer to a jar

  4. It will keep, unopened, for six months and a couple of weeks once opened.
