We eat out at a lot of Greek and Turkish restaurants and I always love the rice. This is a really good home version.
Ingredients
1 tablespoon butter or margarine
1 tablespoon olive oil
2 tablespoons orzo
1 cup white rice
2 cups chicken stock
Method
In a shallow saucepan, melt the butter and oil together.
Once melted add the orzo and stir continuously over medium heat until the pasta turns a dark golden colour. Be careful and keep stirring so the butter and orzo don't burn.
Add the uncooked rice and stir thoroughly until the rice is coated in the oil.
Add your chicken stock and bring to a boil.
Cover and reduce the heat.
Let the rice slowly simmer until the liquid disappears (around 20 minutes).
Rest for 2 mins then serve
