Xinxim

Pronounced Zinzim - a traditional Brazilian curry and apparently Pele's favourite dish. It's a combination of chicken and crayfish tails in a lime and peanut creamy sauce. This recipe is from Las Iguanas, which is somewhere we go quite a lot. Mr T made this one and it was banging.




Ingredients


  • Chicken breasts/thighs, cut into chunks

  • 100g crayfish tails

  • 1 small diced onion

  • 1 clove garlic

  • 30g butter

  • 1 level tbsp chilli puree

  • 50ml lemon juice

  • 25ml lime juice

  • 350ml double cream

  • 100ml water

  • 1 fish stock cube

  • 227g peanut butter

  • Salt and black pepper to taste

  • 1 level tbsp olive oil (the recipe states palm oil but I avoid that due to the environment and so on).

Method


  1. Place the butter & oil into a large flat casserole on a medium hob & gently fry the chicken breasts to colour all over then remove from the pan.

  2. Add the add the onion, garlic & chilli puree to the pan & fry without colouring.

  3. Crumble in the fish stock cube & stir.

  4. Add lemon & lime juices, cream, water, peanut & stir together.

  5. Put the chicken back in, add the crayfish, cover & place in the oven for approximately 1 hour at 150C.

  6. When ready the sauce should have slightly thickened.
